Corn Fritters with Salmon and Soy Cream Cheese


1 tsp baking powder (gluten free)

1 onion (small)

2 tbsp rice flour

1 egg

1⁄2 red capsicum

  Salt and pepper to taste

1 cn whole kernel corn


Sautee finely chopped onion and capsicum, cool. Mix all ingredients together and cook ½ dessert spoonfuls of the mixture in a little olive oil until golden on each side. Cool and top with a little soy cream cheese, a dollop of hot smoked salmon and sprinkle with extra fresh herbs such as parsley or oregano. These are great as a snack or entrée or serve with a colourful salad for a light lunch or dinner.

NB: If wheat or gluten are not an issue you can replace rice flour and gluten free baking powder with ¾ cup of your usual flour and baking powder.
